Esta comunicação tem o objetivo de analisar o papel do milho no meio rural do Cariri. Para tanto, recorre-se aos estudos de Carneiro (2003), Cascudo (1967), Flandrin e Montanari (1998), entre outros. Metodologicamente, empregam-se a etnografia e a história oral, tendo-se como lócus a região do Cariri, especificamente os municípios do Crato, Juazeiro do Norte, Aurora e Milagres, por acreditar que muitas das tradições alimentares ainda estão bem preservadas nos sítios da região. Por essa dinâmica, conclui-se que o milho assume um rol peculiar na formação de um sistema culinário a partir da identidade cultural da região, exatamente o que ocorre na região do Cariri. ABSTRACTThis paper aims to analyze the culinary corn system in rural Cariri. To do so, it is used the studies of Carneiro (2003), Cascudo (1967), Flandrin and Montanari (1998), among others. Methodologically, ethnography and oral history are used, with the Cariri region as the locus, specifically the municipalities of Crato, Juazeiro do Norte, Aurora and Milagres, because it is believed that many of the food traditions are still well preserved in the region. Due to this dynamics, it is concluded that corn assumes a peculiar role in the formation of a culinary system based on the cultural identity of the region, exactly what occurs in the Cariri region.Keywords: Corn; Culinary system; Cariri.
