"α-mannosidase is a hydrolytic enzyme that cleaves α-glycosidic bonds ofmannopyranoside derivatives. In this study, the enzyme activity and the specificactivity of α-mannosidase have been determined using the p-nitrophenyl-alpha-Dmannopyranosidehydrolysis assay."
