The article provides information from the literature on cutting, transportation, sorting, inspection, washing, immersion (blanching), desulfurization, dehumidification, drying and storage of dried plum varieties. In particular, during drying, stoves and ovens must be constructed in a manner that fully meets fire safety requirements.
