/short description: This study presents a cross-region comparison of the food cultures of Puerto Rico, Dominican Republic and United States of America. The food is here conceptualized as a non-verbal communication system and Barthes' structural model is used for its analysis and comparison. The authors observe that food can indicate social status, religion, gender, age and geographical origins.
