The evaluation of the quality and safety of food raw materials and food products according to theanalysis of the sanitary-chemical and microbiological parameters which were performed by thelaboratory Center of Hygiene and Epidemiology in the Irkutsk region is presented. It has beenestablished that the risk for the population may be associated with a high probability of disparity tohygienic requirements according to contents of arsenic, nitrates and microbiological agents.
