Nutritional ecology is the primary element in culture of many ethnic groups of Pacific Russia. Nutritional ecology of ethnic groups is a unique formed gastronomic culture and, it seems to be very fragile. We have identified three reference points where the main radical transformational breakdowns in the nutritional ecology of local ethnic groups took place. These points marked the boundaries of the period within which the transformational changes in the gastronomic culture of the ethnic groups of Pacific Russia took place: 1. Tsarist; 2. Soviet; 3. Russian. The current stage of transformational changes has a powerful market potential, which allows us to hope for the success of the revival of local ethnic cuisines.
