The paper proposed a functional-morphological model of the sanitizing system with automatic rinsing. Its analysis identified the main ways of improving the quality and energy efficiency. The analysis of the morphological matrix of solutions helped to determin the optimal settings of the devices of intensification of sanitary processing – multiple use of mechanical cleaners, in combination with a liquid air stream while their supply to the start of milk pipe.
