Veterinary-sanitary examination of freshwater fish sold in Irkutsk

The article gives the results of veterinary-sanitary examination of freshwater fish sold in Irkutsk markets. In total, 50 specimens of cooled and frozen fish were examined. Morphological, organoleptic and physic-chemical methods of fish study due to valid State Standard. The studied fish corresponds to: crucian by weight – selected category, roach by length – large category, bass by length – small category, omul and Peled are not divided by weight and length. It has been revealed that according to organoleptic parameters 94.1 % examined fish is of good quality, 5.9 % has doubtful freshness. Physic-chemical study of doubtful freshness samples has proved the results of organoleptic examination.
