Professor Naoko Fujita, based within the Department of Biological Production at Akita Prefectural University in Japan, has a long career in bioresource sciences and has dedicated more than 20 years of her academic life to studying starch to understand more about this important substance and its mechanisms. There is a small number of researchers around the world who have studied such aspects of starch and Fujita is keen to uncover many of these. To do this she has established several investigations that seek to elucidate a whole picture of starch. Her current studies are concerned with starch biosynthesis mechanisms and developing a clearer understanding of them. By finding out more about the structure and properties of starch, Fujita is hoping to help industry identify the best possible starch for what they are trying to achieve, or even enable the production of foodstuffs that are difficult using more conventional starches.
