Synopsis Application of microtechnics to wheat quality evaluation provides a means for obtaining the following information on as little as 100 g. of sample: moisture, protein, ash, 1,000 kernel weight, flour yield, dough development characteristics, absorption, and loaf volume. Microtechnics can have wide application for wheat breeders by providing quality information on early generations of hybrid populations.
