Application de l'électrodialyse à l'élimination de certains composants du jus de raisin et du vin essais de laboratoire

Des essais d'électrodialyse effectués en laboratoire sur des solutions synthétiques puis sur un vin blanc ont montré que la concentration c des principaux cations et anions du vin, évolue, en fonction du temps de traitement selon la loi générale : c = c O exp (-wt), dans laquelle w est une constante de vitesse qui dépend de la composition du milieu et des caractéristiques de l'appareillage. La connaissance de w, déterminée expérimentalement dans ces différents milieux permet de fixer les conditions de traitement correspondant à la correction voulue et de mieux contrôler la technique. +++ Electrodialysis tests carried out in a laboratory on synthetic solutions and then on a white wine have shown that the concentration c of the principal cations and anions of wine, develop, depending on the time of treatment according to the general law : c = c O exp (-wt), in which w is a constant of speed which depends on the composition of the medium and the characteristics of the apparatus. The knowledge of w, determined experimentally in these different media permits the conditions of treatment corresponding to the correction desired to be fixed and a better control of the technique.
