Fatias de manga dos cultivares Tommy Atkins, Haden e Keitt foram desidratadas à diferentes níveis de perda de água e congeladas em crescentes taxas de congelamento, exibindo um comportamento diferenciado. A variedade Keitt mostrou maior sensibilidade a pré-secagem e apresentou uma redução acentuada na quantidade de material exsudado. A utilização combinada das técnicas de pré-secagem e congelamento possibilitou a redução da exsudação. Este efeito foi sensível somente para valores de desidratação até 20% de perda de peso. A redução da quantidade de gelo formada durante o processo de congelamento foi quantificada. Mango slices of Tommy Atkins, Haden and Keitt varieties were dehydrated at different levels of water loss, frozen at increasing freezing rates. They showed different behaviour. The Keitt variety showed greater sensibility to the pre-drying treatment and presented higher decrease on dripping loss.
