Study of Quality and Traceability Markers in Poultry Slaughter

The aim of this study is to identify quality markers and trace them in the next stage in poultry production. To achieve the objective of the study, three groups of 308 Ross broiler, raised in similar conditions, were analyzed for a period of six months. The analysis of the key markers of quality in chicken meat shows that there are deficiencies in the technological process of slaughter and also significant differences in quality for the groups studied.
