Prevalence and public health significance of blemishes in cuts of Irish beef

Between February 1999 and February 2000 more than 45,000 quarters of Irish beef cattle were examined for the presence of blemishes as they were cut into primal and subprimal cuts. A total of 2379 blemishes, either scars or cysts, were found. Eight of the scars and one cyst tested positive for residues of inhibiting substances.
