Defining just‐about‐right concentration for doenjang soup appealing to Korean consumers

Doenjang refers to a traditional food ingredient in Korea, commonly consumed as a soup ( jjigae ). The objective of this study was to define the just‐about‐right (JAR) concentration of doenjang soup that appealed to Korean consumers. Doenjang soup recipes were standardized, and the various concentrations of doenjang paste in soup were selected as 5, 7.5, 10, and 12.5%. Physiochemical analysis of doenjang soups with different concentrations was conducted, which was followed by a consumer acceptance test using students at Jeonbuk National University ( N = 91). Increased salinity and °Brix were observed as the doenjang paste concentration increased ( p < .05). Overall liking score also increased with increasing concentrations of doenjang paste in the soup ( p < .05), whereas 5% doenjang paste concentration received the lowest overall liking scores (4.07 on a 9‐point hedonic scale), which corresponded to 0.93% salinity. When 5% doenjang paste was applied to the soup, consumers perceived that it contained fewer ingredients ( p < .05). A JAR saltiness score revealed that 7.5% concentration of doenjang paste in soup was perceived to have JAR saltiness by consumers. Practical applications Doenjang is a widely accepted fermented food ingredient in Korea. However, cooking methods using doenjang have not yet been standardized. This study reports the just‐about‐right (JAR) concentration of doenjang paste in a soup ( jjigae ‐type). Findings from this study can aid sensory and food scientists in the field to design proper sample serving protocols of doenjang jjiga e and specialists in culinary arts to develop and optimize recipes using doenjang in a manner that appeals to consumers.
