The speciation of elements is closely related with their biological effects, speciation of three heavy elements in Lentinus edodes were determined by ICP‐OES after separation by Tessier sequential extraction procedure. Results showed that total contents were Pb > Cd > Cr both in fresh and dried samples, Cd content in the samples was slightly higher ( P  < 0.05) than that of GB 2762‐2012 (0.5 ug/g). Pb were mainly in the form of the organic in fresh samples, it changed to exchangeable and residual after hot air drying (HD) and freeze drying (FD), respectively. Cd were mainly in the form of water soluble in fresh and HD samples, and exchangeable increased to major species after FD. Cr were mainly in the form of the organic and residual in fresh and FD samples, respectively, it took on a more balanced distribution after HD. After soaking, the forms of water soluble, exchangeable, carbonates bound, iron and manages oxides decreased significantly ( P  < 0.05). Practical Applications In this article, fresh Lentinus edodes were dried using hot air drying and freeze drying; Pb, Cd and Cr of fresh and dried samples were analyzed, the changes of the speciation of elements after hot air drying and freeze drying were comparatively studied. Moreover, different speciation of the elements in dried L. edodes were also analyzed after soaking. This work could provide theory basis for reducing and controlling the hazards of toxic elements.
