Processing of the fish into smoked product in Libreville, and particularly on the sites of Pont Nomba, Aviation, Grande Poubelle, Petite Poubelle, Grand Village and Barracuda, goes from a seasonal home economy to an annual trade one. This economy is marked by relations with customers guaranteeing regular orders, incomes and sales of stocks. This new economy is at the origin of the fast evolution of the processing of the fish in smoked product, a women’s essentially activity dominated by the fishermen’s wives. The evolution of that activity requires the control of the preservation and of the quality of the transformed products.
