Summary The incidence of ecchymosis in beef carcases in Queensland is discussed together with its importance in the meat industry. Observations indicate that the condition appears in a percentage of animals–particularly ox, when stress factors are applied prior to slaughter, at the time of stunning and until the carcase is bled. These stress factors are discussed and the manner in which they may be obviated is suggested.
