The author summarizes the work carried out in France and neighboring countries, for the last decade, on cultivation of European sea bass ( Dicentrarchus labrax ), gilthead sea bream ( Sparus auratus ), grey mullet ( Mugil cephalus ), Dover sole ( Solea solea ) and turbot ( Scophthalmus maximus ). Particular emphasis is given to the European sea bass, a carnivorous fish whose market value ranges between 6 and 10 $US/kg. Among the species listed, it is the only one presently cultured from egg to pansize fish in commercial ventures. Although economic aspects are not completely known, several large‐scale hatcheries and demonstration farms are under construction. Many others are planned for the near future.
