Development of the Louisiana crawfish industry from one of erratic natural production to more stable pond culture is reviewed. Pond construction, stocking, life history, harvesting and management practices are discussed. Rice field‐crawfish culture offers a worldwide opportunity to double crop production with minimal investment.
