A more complete understanding of the physical treatment of food in the mouth demands that both the physical qualities of the food and the relevant forces and displacements to which the food is subjected be quantified. The purpose of this article is to suggest more collaboration between oral and food texture researchers since we believe that it is only through such interdisciplinary research that progress can be made.
