The skin sensitization of cinnamaldehyde is probably initialed by the reaction of cinnamaldehyde with ɛ‐amino groups on protein side chains. α‐Substituted cinnamaldehydes, which are known nottobe skin sensitizers, react very slowly or not at all with amines in comparison with cinnamaldehyde.
