Whey permeate, a dairy by‐product, was studied as a growth medium for two white‐rot Basidiomycetes, Lentinus edodes and Pleurotus ostreatus. Mycelial growth and phenoloxidase production appeared to be highly stimulated when the fungi were grown on the permeate instead of synthetic medium. No further increment in phenoloxidase production was observed when the permeate was supplemented with CuSO 4 .
