A lactoperoxidase system activated by glucose oxidase was bacteriostatic to Listeria monocytogenes inoculated into UHT milk supplemented with glucose. The incorporation of urea peroxide as an additional hydrogen peroxide‐generating agent did not enhance the inhibitory effect.
