The effect of pH and temperature on initiation of growth of Listeria monocytogenes

The ability of 16 strains of Listeria monocytogenes , including two serotype 1 and 14 serotype 4 strains, to grow in a nutrient medium acidified with HC1 to pH values between 4·2 and 7·0 at intervals of 0·2 units has been investigated. The minimum pH values at which growth was detected at 30, 20, 10, 7 and 4°C were, respectively, 4·39, 4·39, 4·62, 4·62 and 5·23.
