The Direct Epifluorescent Filter Technique (DEFT) could be used as an alternative to the Howard Mould Count (HMC) to enumerate mould, bacteria and yeast in tomato concentrate. The DEFT counts of micro‐organisms before and after thermal treatment were similar. ATP and chitin assays were also examined as possible alternatives.
