Educational provision for potential recruits to the dairy industry has changed dramatically over recent years. This study considers the current situation in various countries including the United Kingdom, and highlights the evolution of the traditional dairy based courses to curricula which now embrace science and technology of all main food areas, together with an increasingly important element of quality management. Effective delivery of current courses via the use of contemporary teaching methodologies is explored. Emerging concerns that the specific training needs of the dairy industry are poorly addressed by the nature of current courses are discussed .
