This paper describes dairy related research currently underway in the Food Science Division in Belfast. Topics include the heat resistance of Mycobacterium paratuberculosis , which has been implicated as the causative agent of Crohn's disease of humans, incidence of enterovirulent Escherichia coli in raw milk, shelf‐life of pasteurized milk, dietary manipulation of milk fat composition and the application of high pressure processing to dairy products.
