Nutrient content of liquid milk as retailed in the United Kingdom

An analytical programme was carried out to assess the composition of UK retail milk. Test samples of pasteurized bulk milk were taken each month over a period of 17 months from processing dairies throughout England and Scotland and Wales. Major constituents, minerals, amino acids and fatty acids were analysed and results examined for seasonal and regional variations. Results were also compared with documented data.
