The production of proteins from whey by ultrafiltration with or without ion exchange is now established. Few of the other potential uses for whey, which are largely possible uses for lactose, are commercially attractive. The production of alcohol, hydrolysis to glucose‐galactose, anaerobic fermentation to produce methane and production of ammonium lactate are established processes. Other possibilities are considered, but considerable research effort will be needed with guidance from industry on economic factors.
