An analytical programme was carried out to assess the composition of a variety of United Kingdom cheeses. Test samples were taken each season from regional centres in England and Wales. Proximates and minerals were determined and results were examined for seasonal and regional variation. Results were also evaluated for their compliance with statutory regulations.
