Work is described on on‐line meters for the moisture content and salt content of butter from a continuous buttermaker. It is shown that the moisture meter gives a very accurate estimation of the rapid moisture test value, and the salt meter accurately estimates the reference salt value. The incorporation of the meters, together with a moisture and salt controller, has allowed the mean moisture content of butter to be increased by approximately 0.16%, and the mean salt content of butter has increased by 0.12%. This increase represents a considerable financial saving.
