The importance and significance of raw milk quality to the liquid milk processor are considered in the light of changing commercial pressures. The attributes the processor seeks in his raw milk supplies are examined, how he handles and processes this milk to ensure customer satisfaction and, finally, what improvements still need to be made in the quality field.
