The paper is concerned with two different methods in the demineralization of whey and the economics of the two processes ion exchange and electrodialysis are assessed. The operation of each system is described in full and the various advantages, disadvantages and limitations are evaluated. Operating concentration, cleaning, energy costs, effluent disposal, yield and product acceptability for the two processes are discussed. Appendices showing operating costs in detail are included.
