The importance of milk as a source of protein for human needs is discussed and tables are shown illustrating the contribution made by dairy products to nutrient values in developed and developing countries. The role of technology is considered and the opportunities for the future expansion in the utilization of skim milk and whey and the value of lactose and milk fat are emphasized.
