The paper shows the effect of price rises on the decline in consumption of dairy products in the EEC. The use and retailing of cheese is discussed with the advantages shown of the increase in sales volume from counter service with its widely varied range of cheeses and the opening of cheese shops with a UK variety. Tables showing production in member countries are given and the modernization in the manufacture of cheese assessed. Problems of imports also exports are examined.
