Summary Air agitation is established and has been used successfully for many years. Though it is difficult to claim any outstanding advantages over mechanical agitation, there is at least the suggestion of more kindly treatment of pasteurized milk, or a greater latitude in the case of careless handling, but this is very much a matter of personal opinion. It shows up to greater advantage where there is a battery of tanks rather than where there are only one or two. It should not be used for finished evaporated milk. It has great possibilities for agitating milk arriving in transport tanks.
