Summary The development of nutritional knowledge and related advice over a century and a half is sketched through the seven eras of: proximate principles of foods; vitamins; energy; protein; controversy about fats; fear of food additives; and reaction to overindulgence. The conclusion is reached that as basic knowledge is strengthened through new findings, interpreters need to be cautious.
