Summary Immunoassays have found considerable application in clinical diagnosis, but have so far had surprisingly little impact on food analysis. This situation should now change, with the advent of the first commercially‐produced immunoassay kits specifically for food analysis. Immunoassays differ from other modern methods of analysis in that the high technology resides in the molecules rather than the apparatus. They are thus easy to perform, sensitive, specific and relatively inexpensive. Since they may be adapted for the determination of food toxins, antinutritional factors, additives, vitamins, etc., they offer considerable potential to the nutritional analyst.
