Summary The potato is a source of high‐quality protein, having a particularly favourable lysine content, which makes it a useful supplement to lysine‐deficient staples. It contains significant quantities of dietary fibre and is the most important source of ascorbic acid in the British diet, as well as supplementing thiamin, niacin, folic acid, vitamin B 6 and pantothenic acid, and the minerals iron, copper, zinc and phosphorus.
