Starch is the main supply of polyglucosans for our metabolism because, in contrast to cellulose, it is easily digested and can be stored without serious difficulty in seeds or tubers and as flour. Glycogen which is easily metabolized by reversible synthesis and mobilization in animal tissues is too expensive for mass production.
