Food composition tables are a frequently used tool in the calculation of the nutrient composition of mixed diets. Recent studies comparing calculated and analysed estimates of intake are reviewed; the sources of inter‐study error and the ‘real’ differences between calculated and analysed results are examined separately, and the usefulness of estimates of variability and possible future developments in food composition tables are discussed.
