Contamination of broiler chickens by Staphylococcus aureus during processing; incidence and origin

Staphylococcus aureus was present in only small numbers ( ca 10/g) on the skin of broiler chickens before processing. During processing, contamination of carcases with this organism increased to > 10 3 /g of skin. Based on the results of phage typing, it was shown that the increase in contamination was due to a strain of Staph. aureus which was indigenous to the processing plant. Plucking and evisceration appeared to be the main stages at which contamination of carcases with Staph. aureus occurred.
