Summary The dielectric properties of herring ( Harengus harengus ) flesh were measured over a frequency range from 0.1 to 10 GHz using a transmission time domain spectrometer. The relationships between the various components of the complex permittivity and composition in terms of water, fat and ash are discussed as a basis for a rapid measurement technique.
