A computer model was developed to predict changes in the gaseous environment (O 2 and CO 2 concentration) of ripening tomatoes packaged in polymeric bags for a long period of storage. The gas model was then combined with the color development model derived by the authors in a separate study to yield an integrated model. The integrated model was validated for two different weights of tomatoes at the “turning” color stage and stored in two types of films.
