Dimethyl acetals of hexadecanal and octadecanal in the phospholipid fraction of raw and cooked turkey breast meat were monitored for quantity and identity during 12 months of frozen storage by gas chromatography/mass spectrometry (GC/MS) using two different methods of esterification.
