Summary. Applications of the GEMS computer flowsheet simulatian program to identify and evaluate cost saving opportunities in the food processing industry are described. Examples include modificatian af existing peel‐oil recavcry during orange juice processing, energy reduction and sugar control in patato blanching, and design improvements in process equipment for cross flow air tunnel dryers.
