Summary In this paper we discuss the evaluation of a new process for obtaining partially concentrated oil from distilled lime oil. A qualitative and quantitative analysis was carried out with the aid of gas‐liquid chromatography and the physical, chemical and sensory characteristics were also determined in the processed oil. The results indicated that the partially concentrated oil has a good quality and greater stability compared with the natural oil.
