In order to understand the origin of numerous metabolites found in human urine following ingestion of bananas, a study of aromatic metabolism in the banana has been initiated. Thin‐layer chromatography and reverse‐phase ion‐pair liquid chromatography with electrochemical detection have been combined to yield specific information about aromatic amino acid metabolites in the pulp and peel of the banana.
