Summary A method of measuring the approximate internal, external and total surface area of eviscerated poultry carcases is described. The results of a series of measurements derived from commercially produced carcasses are expressed as linear equations from which the approximate external and total surface area of eviscerated carcases can be calculated. The surface area of the body cavities can be determined by difference. The need to supply separate equations to the calculation of the surface areas of turkeys above and below 7 kg is discussed.
